I've experimented a lot with protein icecream recipes and it's hard to get a good consistency. This recipe from is simple, uses only 3 ingredients and doesn't require an ice cream machine. 

For a creamier icecream use a casein or protein blend, otherwise add a couple of tablespoons of milk to the mix if it's too thick.  For an even richer flavor add an extract such as vanilla.
